Lemon Cheese Filled Cake

This is a very special recipe shared by my aunt which was passed onto her many years back by her friend. So, friends relish this exquisite, easy to make “Lemon cheese filled cake” along with your coffee.

Ingredients

  • All-purpose flour – 2 cups.

  • Butter – 1 ½ sticks / 6 oz./ 170 g.

  • Cream cheese – 8 oz. / 227g.

  • Lemon juice – 1 tbsp.

  • Egg – 1

  • Sugar – 1 cup

  • Salt – ¼ tsp

  • Yeast (Rapid rise)-1 pct.

  • Lukewarm water – ¼ cup

Directions

  • Dissolve yeast in lukewarm water. Let it to activate.
  • Add salt to flour.
  • Blend butter with all-purpose flour and form into crumbles.
  • Add yeast mixture and egg. Mix well.
  • Knead to form a soft dough.

  • Refrigerate for an hour.
  • Prepare the filling:
  • Remove from fridge and roll dough into an oval or rectangular shape of 12- 15 inches long and 5-6 inches in wide.
  • Take cream cheese, sugar, and lemon juice and mix well.

  • Keep refrigerated until use.
  • Continue with other steps.
  • Spread filling in the center.
  • Fold the sides to meet in the middle. Tuck in the ends.
  • Pre heat oven to 350°F or 180°C.
  • Place on a baking tray and bake in a pre-heated oven at 350°F or 180°C for 25-30 mins.
  • Then remove from oven and allow it to cool.
  • Sprinkle powdered sugar and cut into desired sized pieces.

  • Serve the cake with coffee or tea.
