American Style Chicken and Vegetable Lasagna

minutesLasagna is a very easy to make and a very filling dish. You can add your choice of meat and vegetables to suit one’s palate. Your one dish meal is ready for a weeknight dinner.
Ingredients
Chicken – 2 ½ lbs.
Tomato sauce – 1 can -29 oz.
Tomato paste – 1 can 12 oz.
Lasagna noodles – 15
Cottage cheese – 12 oz / 341gms.
Mozzarella cheese – 1lb / 453 gms.
Mushrooms sliced – 5.3 oz /150gms.
Pepper – 1
Broccoli – 7 oz /200 gms.
Garlic minced – 4.
Italian seasoning – 4 tsps.
Salt – 4 tsps.
Black pepper powder – 1 tsp.
Parmesan cheese grated – ¼ cup.
Oil – 4 tbsps.
Directions
- In a saucepan, cook the lasagna noodles to a la dente. Drain the water and apply oil to the noodles to keep it separated.
- Cut chicken into small pieces, slice mushrooms, broccoli, and peppers.
- In a pan, add 3 tablespoons oil and sauté chicken until all water evaporates. Add Italian seasoning, chili flakes and salt.
- Now add mushrooms, peppers, and broccoli to the chicken. Sauté until done. Keep the chicken and vegetables aside.
- Take a pan, on a medium heat add oil, minced garlic, tomato paste and tomato sauce. Mix well. Add salt, chili flakes, Italian seasoning, and simmer until the sauce bubbles.
- Add the chicken mix to the sauce and cook for about 5 minutes.
- Pre heat the oven to 375°F or 190°C.
- Meanwhile take an oven safe dish and layer with sauce first. Then layer with lasagna noodles. Next layer chicken and sauce mix, then add grated cottage cheese, mozzarella cheese. Repeat these layers again until you reach the top.
- When you reach the top layer, sprinkle grated parmesan cheese.
- Cover with tin foil and place it in the oven.
- Bake covered for 25 minutes.
- Uncover and bake further for 20 minutes.
- Remove from oven and let it stand for about 15 minutes before you cut.
- Serve with garlic bread and a side salad.
- Microwave method
- Layer the microwave dish same as the oven method.
- Place it covered with baking paper and microwave for about 5 minutes. (1100 watts).
- Then remove cover and microwave for about 2- 3 minutes.
- Remove let it stand for about 5 minutes before cutting.
- Serve with garlic bread and a side salad.
Notes
- I usually add turmeric to chicken while cooking which acts as an antiseptic. I added ¼ tsp when I sautéed the chicken.
- For Microwave method- I have used a 1100 watts power. Alter your times on cooking according to the wattage.
- I have used 12 lasagna noodles for baking in the oven and 3 for microwave method.
