Waffle Uthappam

I am delighted to share my first recipe to you all. I am incorporating an Indian tradition with a Western Twist. This shows how we can globally blend easily into each other’s cuisines

Waffle Uthappam

This recipe is a recreation of the original South Indian Uthappam. Its a savory Waffle with some vegetable toppings. The waffle is made with rice and dhal batter. Hence this is totally gluten free, suitable for vegans as well.

Ingredients

  • Uthappam Batter – 1 liter (34 oz.)

  • Oil – 20 ml ( 7 oz.) to grease the waffle maker

  • Finely Diced Onions, – 100 g ( 3.5 oz.)

  • Grated Carrots – 100 g ( 3.5 oz.)

  • Finely Diced Tomatoes – 100 g ( 3.5 oz.)

  • Finely Chopped Coriander leaves – 25 g ( 9 oz.)

  • Finely Diced Green Chilies – (2-6 chilies)

  • Salt to taste

  • Water if required to adjust the consistency of the batter.

Directions

  • Pour 1/3 cup of the batter on a greased waffle maker.
  • Add the vegetable toppings of finely diced onions, tomatoes, carrots, green chilies and coriander leaves.
  • Remove from the waffle maker once done like any other waffle with a wooden spatula
  • Serve with Sambar and Chutney which will serve as a dip.


Notes

  • I usually make my dishes from the scratch as much as possible. I have ground the batter with all raw ingredients in a wet grinder. I know that time would be a constraint to many of us, so you can get a store bought idli / Uthappam batter and use it to make this dish. This ground batter is available in most Indian grocery stores.
