Pad Thai is a stir fry noodle dish and a popular street food in Thailand. The dish consists of a protein like chicken, shrimp, tofu, and eggs.

minutesI am presenting the vegan version of Pad Thai to all my vegan friends. Usually, the Pad Thai sauce is a combination of tamarind sauce, palm sugar and fish sauce. Finally garnished with peanuts and garlic chives. One of the popular dishes in the world. To enjoy an appetizing vegan form of the dish I have substituted the fish sauce with soybean paste/sauce.
Ingredients
Rice Noodles – 1lb/ 454g
Tofu – 1lb/ 454g
Oil – 6 tbsps.
Carrots Julienned – 1 ½ cups
Beansprouts – 3 cups
Mushrooms sliced – 2 cups
Tamarind pulp – 6 tbsps.
Palm sugar – 5.3 oz. / 150 g.
Soya Beans sauce – 6 tbsps.
Soya sauce – 6 tbsps.
Chili garlic paste – 6 tbsps. or as per spice level
Chopped peanuts – 1 cup
Chopped fresh cilantro – for garnish

Directions
- Soak noodles in water for about an hour or as per the package instructions.
- Soak tamarind fruit in hot water and extract the pulp. Or you can get a tamarind concentrate in stores. Tamarind concentrate is quite strong, and one can dilute by adding water to adjust the tanginess.
- Heat the pan and melt the palm sugar and add the tamarind pulp. Mix well and the bean sauce and soya sauce. Pad Thai sauce is ready.
- In a large pan, heat oil and stir fry tofu until slightly browned. Remove and keep it aside.
- In the same pan, stir fry mushrooms. Now add the tofu back to the pan.
- Add half the Pad Thai sauce and chili garlic paste.
- Rinse the soaked noodles and drain well. Now toss the noodles in the pan and mix well using the tongs. Add bean sprouts and carrots. Toss well again. Add the remaining sauce and mix evenly.
- Remove from heat. Garnish with peanuts and cilantro along with lime wedges on the side.
Notes
- One can source a vegetarian fish sauce in stores. But this is a completely processed form with artificial flavors. I usually prefer to keep my ingredients as natural as possible and use less processed items in my cooking.
