Rasmalai is an exotic festive dessert originating from West Bengal, the eastern part of India. It is a combination of two words “Ras” meaning juice and “Malai” meaning cream.

minutesRasmalai is typically a creamy and milky syrup that consist of cottage cheese made into discs. The syrup is purely made of milk, sugar, cream, and saffron mixture. The discs have to be super soft and should melt in your mouth. There are a few variants of this splendid dessert- either using the the elaborate method or the instant way.
Unlike other Indian desserts this dessert needs skill and practice to perfect and get it right. I am exhibiting an easier instant method of making this exotic Strawberry Rasmalai for your valentine on valentine’s day. “Love is in the air” and lets start the preparation!
Ingredients
Milk Powder – 1 cup
Egg – 1
Plain flour – 1 tbsp.
Milk 1 -2 tbsps. (if required)
Baking Powder – 1 tsp
Ghee – 1-2 tsps. (clarified butter)
Strawberries – 4
Milk (Fresh) – 5 cups
Sugar – ¾ – 1cup
Cardamom Powder – 1 tsp
Saffron – a pinch
Pistachios – 8 -10
Almonds Blanched – 8 -10
Directions
- In a saucepan mix milk and sugar and boil it for 10 to 15 mins on a low to medium heat / flame. ( I have used organic cane sugar that’s why its producing a light brownish color).
- Add cardamom powder and saffron. Let the milk boil on a slow heat/ flame for a couple of minutes. Switch of the heat and leave it aside.
- Make a dough by mixing milk powder, plain flour and baking powder,
add one lightly beaten egg and ghee. Knead it into a dough. If it is very crumbly, add 1-2 tablespoons of milk and form a dough. - Usually, one would make it into small balls and flatten it into disc shaped. To mark the occasion of – ‘Valentine’s day’, I rolled the dough flat on a sheet with a rolling pin. I used a heart shaped mold to cut it into hearts of 1 cm in thickness. It will yield about 20-22 heart shaped discs.
- Once you have all the discs ready, take the saucepan with the milk and start the heat on a low to medium. Put these discs into the boiling milk. Cook for 7-8 mins.
- These discs will swell and will be very soft. Make sure to handle it gently while scooping the discs from the pan.
- Remove from heat. Cool it well to room temperature.
- Now take the fresh strawberries and put in a blender and make a fine puree of the strawberries and add it to the cooled Rasmalai. Mix gently.
- Garnish it with chopped almonds and pistachios. Refrigerate the dessert as it is best served cold.
- Take a plate or bowl and place the discs and pour the creamy sweetened milk over it and garnish with some nuts and strawberry and serve it to your Valentine.
Notes
- Add the strawberry puree only when the milk cream mixture is completely cooled off just to prevent from curdling.
- ghee can be substituted with butter.
