hoursParotta is a layered, flaky and spiral flat bread made from all purpose flour. Parotta has its origin from Sri Lanka and it was introduced to the Malabar region of Kerala in India. Hence it is commonly known as Malabar Parotta. This flat bread is a delicacy served in restaurants or a specialty street food. I am bringing this splendid Malabar Parotta recipe to be prepared at the convenience of your home kitchen.
Ingredients
All Purpose flour / Maida – 2 cups
Water – 2/3 cup
Salt – 1 tsp
Sugar – 1 tsp
Oil – 3 tsps.
Oil for rolling parotta, frying – 1 cup.
Baking powder – 1 tsp
Directions
- Mix the All-purpose flour, salt, sugar, oil, and water. Form a soft pliable dough.
- Knead the dough for about 10 minutes. Cover the dough with a cloth or tea towel and let it rest for about 2-3 hours.
- After the resting period, form dough balls.
- Using a rolling pin to flatten the dough balls and roll into a disk shape.
- Take a shallow bowl, add a ¼ cup of oil and place the rolled discs on top of one another. Ensure each disk is covered in oil.
- Take the rolled disk and stretch the sides to form a larger circle.
- Hold at top 2 ends and fold and press until the bottom of the disk. Just like the folding in a paper origami fan.
- Repeat with all the disks. Let the spiral dough rest for a few minutes.
- Then gently tap on the spiral disk to stretch with the hand or with the help of a rolling pin.
- Heat a flat pan and place the spiral disk and heat for a minute on each. Keep the heat at a low to medium level.
- Apply oil on each side. Keep the heat at a low to medium level and cook gradually to ensure the parotta is cooked all through the center. When the parotta turns into a golden brown, remove from heat.
- Then comes the tricky part- take the parotta and while it is still hot, gently crush to make it fluff up. You could use paper towel instead of your hands directly to fluff up.
- Serve with your favorite vegetable or meat curry.
