Happy St. Patrick’s Day! Shamrock shaped scones ”a tribute to Ireland”.
A very traditional but very popular recipe, which is great for an afternoon or anytime snack.
Irish Scones

minutesA scone is a baked item made of flour and baking powder added to rise. It is filled with raisins and nuts. Scones are so similar to the North American biscuit. Use your favorite filling to make this recipe your own. It is generally thought that scones are best eaten when they are very hot and freshly baked right from the oven, accompanied with melting warm butter. Also usually served along with a piping hot Irish tea.
Ingredients
All Purpose Flour – 225gm/ 8 oz.
Butter – 50gm / 1.8 oz.
Sugar – 25gm / 0.9 oz.
Raisins – 50gm / 1.8 oz.
Almonds ( Chopped) – 50gm / 1.8 oz.
Milk – 150ml / 5 oz.
Baking powder – 2 ¾ tsps.
Salt – ½ tsp.
Directions
- Sieve flour, baking powder and salt into a bowl and stir in the sugar.
- Rub in butter. Add the raisins and nuts.
- Add sufficient milk about 125 ml to make a soft dough.
- Turn onto a floured board and knead to remove any cracks as much as possible.
- Roll out lightly to 1” in thickness. Cut into regular round shaped scones or to your desired shape. I used the shamrock shape.
- Place on a floured baking tray.
- Bake in a pre-heated oven 200°C/400°F/Gas 6 for 18-20 minutes.
- Glaze on top of the scones with the remaining milk. (Once placed in the oven milk wash every 5 minutes to produce a good glaze).
- Cool on a wire tray.
- Serve warm with butter.
Notes
- One can use self rising flour directly instead of using all purpose flour, baking powder and salt.
- To make whole meal (brown) scones, use 125g Coarse Whole meal and 125g Self Raising Flour following the same method as above.
- Milk wash- Use a food brush and dip some milk and apply on top of the scone to give the glaze. ( as shown in the picture above)
