Over ripened bananas are a common feature in every household. Any housewife would not like to see a banana being thrown into a bin. That’s how Pillsbury brought this new life to bananas being introduced as an ingredient in the making of Banana bread.

Ingredients
Plain flour / All-purpose flour – 4 cups
Bananas (overripe & mashed) – 5-6
Oil – 1 cup
Eggs – 4
Sugar – 1 ¾ – 2 cups
Mixed nuts – 1 cup
Salt – 1 tsp
Baking soda – 2 tsps.
Directions
- Take a bowl and mix oil and sugar.
- Whisk the eggs and add to the above mix.
- Add all dry ingredients.
- Then add the mashed bananas and nuts.
- Blend all ingredients well.
- Preheat oven to 320°F / 160° C.
- Transfer the mixed contents to a baking dish.
- Bake at 320°F / 160°C for about 60 minutes to 65 minutes.
- Remove from the oven and allow it to cool on wire rack.
- Cut into slices and serve as a quick bite at any time of the day.
Notes
- To check if the bread is baked right, insert a knife and when removed the knife has to be released clear without any dough sticking to the knife.
